Throughout the month of July, two exciting new cocktails are being introduced as The Zuk Bar’s Cocktails of the Month.  They are GIN-GER Rocktail and Blue-Ice Storm, which, as well as having cool, enticing looks are also irresistible to the taste buds. Both feature an interesting concoction of ingredients that pleasantly surprise all cocktail lovers, providing superb new flavours from the very first sip.

GIN-GER Rocktail (Baht 350++)

The Sukhothai Bangkok furthers its reputation as a leading destination hotel for fine dining by inviting a second 3-Michelin Star chef to join “The Art of Dining” series in 2016.  From May 23-28, we proudly present an exquisite gourmet event featuring the exalted cuisine of (first time in Thailand) 3-Michelin Star Chef Emmanuel Renaut.

 

Emmanuel Renaut was born in Soisy-sous-Montmorency, France. He developed his culinary talent by joining the CFA of Laon in 1984, training in Étouvelles and later in Paris. Subsequently, he joined the team of the Hôtel Le Lotti, working with Christian Constant at the Hôtel de Crillon. Later, he was hired by Marc Veyrat, head chef of the Auberge de l'Eridan in Veyrier-du-Lac, and became a sous-chef for four years. After working with cooking and pastry chef Yves Thuriès he moved on to London where he became head chef of Claridge's.

 

In 1998, Emmanuel established himself at Mégève in Haute-Savoie and founded his own restaurant, Flocons de Sel. He received his first Michelin star in 2003, his second in 2006, and his third in 2012, in addition to being named "Cooking Chef of the Year". In 2007, he published La Montagne et le Cuisinier with Isabelle Hintzy and Catherine de Montalembert.  He is also the holder of the prestigious "Meilleur Ouvrier de France" (Best Craftsmen of France) and "Compagnon du Tour de France" (Companion of the Tour de France).

 

Chef Emmanuel Renaut creates his own brand of cuisine, generous, lively, colourful, appealing and modern.  Sourcing products in their purest form, then transforming them in a manner that reveals their very best qualities reflects Emmanuel’s style, committed as he is to using his creativity to produce exceptional, unique dishes.

 

From 23-28 May 2016, Emmanuel Renaut and his skilled team will man the open kitchen at La Scala to prepare their fabulous cuisine, employing their own modern techniques to create critically acclaimed dishes for discerning food connoisseurs… a rare, exclusive opportunity not to be missed.

The Sukhothai Bangkok, renowned throughout the capital for its delicious Thai cuisine, proudly invites discerning diners to savour the traditional Thai summer dish, Khao Chae, during April.

 

Khao Chae, a refreshing flower-scented rice dish topped with ice, Thailand’s answer to the hot summer climate, will be served for lunch at award-winning Celadon restaurant from 1-30 April for Baht 1,250++ per set.

 

Khao Chae is referred to as rice soaked in cool water, "Khao" meaning rice and "Chae" to soak. Around the time of King Rama II, the recipe was adapted from a Mon dish and modified through the ages. In those days, ice was not available in Thailand, so water was kept cool by putting it in earthenware vessels in a shaded place.

 

Khao Chae, as prepared by Chef Rossarin at Celadon consists of a lavish array of traditional condiments, including fried shrimp paste balls, ground steamed stuffed bell peppers with minced shrimp, sweetened shredded fish, fried stuffed shallots with ground catfish, crispy beef or pork threads, sweet preserved radish, watermelon with sweet ground fish and shallot and homemade marian plum in syrup. Served with exquisitely steamed jasmine rice infused with chilled jasmine water, Khao Chae provides a cooling, memorable dish for the hottest of months!

As one of Thailand’s leading destination hotels for fine dining, The Sukhothai Bangkok has always sought to provide exceptional gastronomical experiences. In March, continuing “The Art of Dining” series, established in 2009, we proudly present an exquisite gourmet event featuring the exalted cuisine of 3-Michelin Star chef Gilles Goujon.

 

There was once a young apprentice with an insatiable appetite who went on to become a Michelin three-star winner. He was recently voted one of the best chefs in the world and also a Meilleur Ouvrier de France, (MOF). A native of Bourges, Gilles Goujon began his cooking career in Béziers.  After serving as an apprentice at la Compagnie du Midi and prep cook at Le Ragueneau, he followed the stars at Le Moulin de Mougins… With Chef Roger Vergé, his mentor, he continued to learn and refined his style with a touch of Provence. He ventured on to the restaurant Le Petit Nice in Marseille, then to Carry-le-Rouet and L'Escale, contributing to the award of a second star.  In 1992, Gilles took over L'Auberge du Vieux Puits at Fontjoncouse in the Aude, France, and in less than five years he and his wife transformed it into a gourmand’s paradise. Eighteen years after opening Auberge du Vieux Puits, he earned a third Michelin star.

 

Gilles was placed in the top 50 of the”100 Best Chefs in the World”, created by the French magazine Le Chef. Always seeking perfection, he offers sheer passion in each meal, reflecting his belief in his work and his dedication to taste and strong commitment to working in unison with small local producers. His wonderful dishes exude delicacy, each one offering tantalizing, authentic cuisine that provides satisfaction at every table. 

 

During 14-19 March 2016, Gilles Goujon and his talented team will bring “Rhinoceros in ballerina”, strong, powerful cuisine to La Scala for just six days… a rare, unique opportunity not to be missed.

Chef Bic Thitisorn and his culinary team are introducing a new theme for our famous Colonnade Lunch Buffet during 7 March and 29 April 2016.  In addition to our regular wide selection of international fare for weekday buffet lunches, various “Thai Touch” dishes will also be available to provide even more culinary options than just a normal buffet lunch.  All diners can enjoy the opportunity to sample items from an authentic Thai menu, carefully prepared in rotation, daily from Monday to Friday.

 

For over two hours each day, you can choose from an array of tempting food on stations that include Cold Seafood, Cheeses and Cold Cuts, Appetizers, Sushi and Sashimi, Soup, Western Specialties, Carving, Fresh Pasta, Asian Dishes Corners and The Sukhothai Signature Corner. Thai Chili Dipping Sauce or “Naam Prik” was created long ago and is a well-known embellishment to the traditional Thai way of eating.  In almost every Thai meal there will be some kind of Naam Prik to accompany the food.  There are numerous variations of Naam Prik, a generic term that also may refer to other types of more or less viscous, spicy, chili-based hot sauces

 

The usual ingredients for Naam Prik are fresh or dry chilies, garlic, shallots, lime juice and often some variety of fish or shrimp paste.  In the traditional way of preparing the sauce, the ingredients are pounded together using a mortar and pestle, with either salt or fish sauce added to taste.

 

Throughout the month of March, Celadon introduces typical Thai cuisine “Naam Prik” to all Thai cuisine lovers, providing a culinary opportunity to sample six specialty dishes created by Executive Chef Rossarin of Celadon, as always, providing legendary Thai cuisine at The Sukhothai Bangkok

Truffles, or “tartufi” as they are known, are richly flavoured mushrooms that first appear in early autumn, from October to December. The Sukhothai Bangkok presents its world-class culinary series “The Art of Dining 2015” and welcomes

2-Michelin Star Chef Andrew Fairlie, Chef Owner of Restaurant Andrew Fairlie at Gleneagles Hotel and Resort, the first and only 2-Michelin Star Restaurant in Scotland to La Scala during 13-17 October 2015.

 

Renowned for his delicate interpretation of the most opulent of French and Scottish cuisines, Andrew insists on using the finest ingredients while never following trends, ensuring his creations are outstanding and exceptional.

 

“Some new techniques I can use, but with others I just think ‘no’. It’s about having confidence in your menu” Andrew said.

 

Andrew has carefully picked only his signature dishes for this exciting five day period, including ‘Home Smoked Lobster’, an intense sense of lobster shells smoked over whisky barrels for up to twelve hours.

 

French culinary influences in his work are reflections of his award of the first Roux Scholarship in 1984, and training in the southwest of France with legendary chef Michel Guerard at Les Presd’Eugenie. Andrew decided to open his own restaurant ‘Restaurant Andrew Fairlie’ in 2001, which was awarded its first Michelin star within its first year and a second star in 2006.

 

Its reputation going far beyond expectations, the restaurant is being named as one of the top ten ‘Greatest Hotel Restaurants’ in the world by US “Hotels” magazine and has been ranked the best of Britain’s top 100 restaurants in The Sunday Times Food List. Moreover, Andrew was also given the title of ‘Grand Chef du Monde’ by Relais & Chateaux, and was named AA Chef’s Chef of the Year.

Born in Argentina, raised in the United States and refined in Europe, Guillermo is a former DJ who has been spinning in various bars and clubs around the world for over 20 years, an experience that gave him insight into how to open and run a successful cocktail bar. He settled down at HPS Amsterdam and now uses his tastes and creativity to mix drinks as opposed to records.

 

Hiding in Plain Sight, or HPS as it is commonly called, is a secret society of cocktail lovers hidden on the outskirts of Amsterdam, the Netherlands. The bar offers carefully handcrafted cocktails in an elegant yet cozy environment.

Having graduated from Stichting Vakopleiding Horeca culinary school, Jacob has been working with many 2 and 3-Michelin Star Chefs across Europe, including Marco Pierre White (UK), Dieter Muller (Germany) and Guy van Cauteren (Belgium), gaining invaluable experience in top restaurants.

 

In the summer of 2002, Jacob and his partner Kim Veldman decided to start their own restaurant “De Leest” paying particular attention to presenting a variety of styles of cuisine from around the world such as Scandinavian, Spanish and Asian, whilst carefully maintaining their Dutch roots.

 

Boerma adheres to his culinary philosophy “do not forget the quality of the product, it is the basis of success”.  He has a passionate interest in the sophisticated flavour of fresh elements and acidity of local ingredients, combined with the latest cooking techniques available.

 

This led him to immense success by gaining his first Michelin star within 6 months, the second star in 2007 and the highest “three stars” in 2013.

 

His talent is reflected by many reputable awards and honourable recognitions. He has been listed among the 50 best chefs of the world at www.lechef.com, GaultMillau Chef of the Year in 2010 and succeeded in his examination for the title of Master Chef - the highest achievement for a chef at the peak of his craftsmanship.

The Sukhothai Bangkok welcomes a new Thai Chef, Rossarin Sriprathum (or Chef Rin) to its award-wining Celadon Thai restaurant. Chef Rin will oversee kitchen operations, the creation of new menus and the selection of premium organic ingredients from the finest suppliers, ensuring discerning guests will be satisfied by the amazing tastes of traditional Thai recipes in addition to its classic styles of presentation.

Born and raised in Thailand, Chef Rin got the inspiration to cook from her grandmothers who are also Thai Chefs and Pâtissiers. She carefully observed how they prepared and cooked the food with recipes using secret techniques, allowing her to explore the culinary world of Thai cuisine from then onwards.

Chef Rin began her journey to becoming a Chef when she was 20 years old. With more than 10 years at The Regent Bangkok, Chef Rin had exclusive experience in presenting traditional Thai cuisine for many Thai food promotions in various countries including Australia, Indonesia, Hong Kong and Japan. Later, she moved to England to be Assistant Head Chef at the renowned Siam House Restaurant and Millennium Hilton Bangkok before joining The Sukhothai Bangkok.

With more than 20 years of experience as a Thai Chef, Chef Rin is trying to maintain the traditional recipes and continue the standard of original Thai taste which is rarely found in other restaurants, even in Bangkok. This is the unique character of Celadon, setting it apart from others and furthering its reputation as the preferred Thai restaurant for local and foreign diners.
