Alex Atala has become known in Brazil and around the world for testing the culinary possibilities of local Brazilian ingredients, uniting classic recipes with new techniques. The opening of the D.O.M. has truly heralded a new era in Brazilian gastronomy. The restaurant has recently been ranked as 7th Best Restaurant in the World by The S. Pellegrino World's 50 Best Restaurants 2011, and it also holds the title "The Acqua Panna Best Restaurant in South America."

This month, La Scala introduces its unique new Mozzarella Bar with dairy counter that features fresh Italian cheeses including Buffalo Mozzarella, Fresh Cow Mozzarella and Burrata. While Mozzarella is a well-known Italian favourite, Burrata may require an introduction. This fresh cheese is a delightful combination of Buffalo Mozzarella and cream, cow's milk, salt and rennet. The outer part is comprised of a thin layer of Mozzarella and when sliced open, a creamy thickened Panna (cream) emerges from the center. Creamy and divine, Burrata is the perfect complement to antipasti or vegetables, or... try it with a spoonful of caviar!

Also this month, La Scala unrolls its delicious new Pan Pizzas. Tasty and light, with an irresistible crispy rim ("Il Cornicione"), the Pan Pizzas will feature an exciting range of unique and succulent toppings.
